Scrambled Eggs, Tomatoes, and Wild Mushroom


Ingredients:
(Serves 2-3)
 
6 large eggs
2 tbsp ice cold butter
1 tbsp creme fraiche
sea salt and pepper
few chives, snipped
cherry tomatoes
Mushrooms
&
2-3 chunky slices of rustic bread

 In a heavy pan:

break the eggs into cold pan
cook on lowest heat possible
add half the butter



Use spatula to stir eggs frequently

When mixture sets, add remaining butter
eggs will take 5-6 min to scramble
*dont let get too hot, keep moving pan off and back on the heat

Toast Bread Slices
Saute Cherry Tomatoes ; Season with salt and pepper 

Add creme fraiche 
Add chives

pile eggs on top. that simple, you're DONE.

eat and enjoy.
